Quinoa was my first thought. Not much protein in couscous and the rest of the ingredients will give the quinoa some taste. And my orange tree is heavy with navel oranges.
I've come to love the versatility and brightness that citrus brings to dishes esp. in the depths of inversions in the winter - I'm looking forward to using some of my bi-rite citrus in this soon! This also dish reminds me of another - chicken thighs broiled with oranges, fennel, and olives and served over cous cous.

Sounds nice and bright. I don't now about the quinoa, but my guess that bulgur would be a good substitute for couscous.
