Pastry for Savory Tarts

An egg yolk makes this tart crust ultra-rich, almost like shortbread. Just as you can fill dessert tarts with almost any fruit imaginable, savory tarts are blank canvases for all sorts of vegetables.

Makes: Enough for a 9-inch tart
Time: 20 minutes, plus time to chill


  • 1 1/4 cups flour

  • 1/2 teaspoon salt

  • 1 stick cold butter, cut into chunks

  • 1 egg yolk
