Simple Syrup

This is perfect for instantly adding sweetness with no worry of remaining undissolved sugar granules. It comes in handy when making sorbets, granitas, and cold drinks including tea, coffee, and cocktails. Make this syrup in any quantity you need; the ratio — equal parts water and sugar — is always the same.

Makes: 2 cups
Time: 10 minutes


  • 2 cups sugar


Put the sugar and 2 cups water in a small saucepan. Bring to a boil and cook until the sugar is dissolved, stirring occasionally. Set aside to cool to room temperature. Use immediately or refrigerate in an airtight container for up to 6 months.
