Nicely written piece.

We’re all free to live our lives as we wish but this adventure strikes me as truly nuts.

With a little practice and a very modest investment in a smoker you can make homemade bbq every bit as good. Let Bittman tell you how.

As both a BBQ enthusiast AND the founder/owner of Nancy's Bar-B-Q in Sarasota/?Lakewood Ranch, FL for the past 13 years, I SO enjoyed this read, Kayla! Even though I'm sitting in my office at my restaurant, my mouth is watering over your post. You were embarrassed over never having been to Snow's? I confess: I've never made it to Texas! Is that pitiful or WHAT? Some day ....

Is it really smoked over pine? Never heard of that being used in Texas BBQ before.

Now that you've had the in-person experience, did you know you can get Snow's shipped to you? We do it as often as necessary. They do a beautiful job packing and their guidelines for warming are spot on. Sure, it's not straight off the pit but when you need it and can't get to it, shipping is the way to go. Opening a box of vacuum packed meat lacks some of the in person highlights but sitting down to a plate of Snow's ribs without all the exertion is remarkably satisfying.
