Looks wonderful - can't wait to try it. FYI there is a typo - "Peel and chop 2 cloves garlic, adding them to the skilled as soon as you can (they’ll cook with the spinach)." I am pretty sure you meant to say skillet but as we know, undertakers bury their mistakes and writers publish them.
My favorite is sort of an Israeli salad: an equal amount of finely chopped grape tomatoes and Persian cucumbers with an equal amount of chopped avocado,( which is my own preference) some chopped parsley, chopped red onion to taste, olive oil, lemon juice, and salt and pepper. I usually don’t want to eat at all after a holiday meal. Why should this salad be just for summer? Eating it after over-indulgence is like coming up out of the water for air.
