Catching up with Victor Hazan, dear husband of the late great cook
This was simply a lovely conversation to listen to. Sometime in the 1990's, I attended a cooking demonstration in Sarasota, Florida by Marcella Hazan. I believe it was at the Colony resort. I'll never forget her instruction on how to peel a red bell pepper, and the audience was very confused as to why one would peel a bell pepper. Marcella was equally as confused when someone asked how you could prepare the pasta ahead of time. She said, why would anyone cook pasta ahead of time? No. It only takes a few minutes to boil. You do not cook pasta ahead!
I am inspired to go back and make some of her recipes. The lasgane in particular! Thank you for sharing these.
