I normally celebrate Polish Christmas dinner with my sons and their partners. This year was a disaster, from Covid and a family dispute. It didn't happen, so I ended up with a ton of Bigos (Polish sauerkraut stew) in my fridge. Normally, the sauerkraut is stewed with smoked sausages and various meats, but my oldest is vegetarian, so this version had porcini mushrooms and white beans.
I went to Chinatown this afternoon and bought half a barbeque duck. And then I thought: Chinese BBQ duck with Polish sauerkraut stew on buttered egg noodles. This is a winner! I just had it for dinner and it is truly a splendid brainwave. The sourness of the slaw is a perfect foil for the smokiness of the duck. I have to work out the proportions and size of the duck pieces, but this is an inspired leftover meal.
